Sweet Mango Sticky Rice
Mango sticky rice is one of my favorite things to order when I go out to eat. I crave it all the time, so I figured I could find an easy way to make this at home. Save some money and not have to leave my house? Win.
I based my recipe off this one, and per usual, changed it to make it easier. Give me an easy mango sticky rice recipe any day of the week.
1 1/2 cups Sushi Rice
1/2 cup Sugar
1 can (13.5 fl oz) Goya Coconut Milk
Rince the rice a couple times. Put your 1 1/2 cups of sushi rice in a bowl and cover with water. Cover bowl with tin foil and let sit overnight.
The next day, drain the water from the rice. Steam rice for 30-40 minutes. Here is a link on how to cook/steam rice.
While steaming the rice, heat up the coconut milk in a small sauce pan. Mix in 1/3 cup of sugar. Heat milk until sugar dissolves.
Drain rice and put into a bowl. Pour 2/3 of the coconut milk into the bowl with the rice and cover. Let sit for 30 minutes.
Put the remaining coconut milk mixture back on low heat and mix in the remaining 1/3 cup of sugar. Heat until sugar is dissolved. Put this coconut milk into a bowl, cover, and place in the fridge to chill.
After 30 minutes, uncover the rice to make sure it’s absorbed the coconut milk. Scoop out one serving of rice and place on plate. Pour some of the chilled coconut sauce on top and add slices of one mango.
